Chef Rüdiger König cooks regional dishes based on recipes that have been passed down through generations. The well-known specialities are sometimes interpreted in a modern way, minimally changed and supplemented with dishes from contemporary cuisine. Stüva 1817 is part of the "Slow Food" movement, which stands for quality and regionality.
